With most modern keyboards, it doesn't matter much, as they tend to sense whether the attached pedal is open or closed upon booting, and the pedal will work fine regardless. If you have an older keyboard, sometimes the open/closed distinction will matter. "Normally closed” makes a completed circuit until the pedal is depressed, while “normally open” makes a completed circuit only when depressed.
